Ingredients

  • 8 oz. pitted dates, chopped
  • nuts, if desired
  • 1 1/2 cups boiling water
  • 2 1/3 cups flour
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 egg, beaten
  • 1 cup sugar
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla
  • 3 oz. cream cheese (2 packages)

Instructions

  1. In a small bowl, place chopped dates and boiling water. Set aside to cool.
  2. Sift flour, baking powder, baking soda, and salt.
  3. Beat eggs, sugar, melted butter, and vanilla until well combined.
  4. Add the cooled date mixture to the egg mixture.
  5. Gradually add the flour mixture, mixing until just combined.
  6. Cut cream cheese into 3/4 inch cubes.
  7. Fold the cream cheese into the batter gently.
  8. Preheat oven to 350°F (175°C). Grease a loaf pan.
  9. Pour the batter into the prepared loaf pan.
  10. Bake for 70 to 75 minutes, until a toothpick inserted in the center comes out clean.
  11. Allow the loaf to cool for 10 minutes, then remove from the pan.
  12. Refrigerate when completely cooled before serving.
