A hearty, creamy potato chowder rich with bacon, vegetables, and herbs, perfect for comforting meals and suitable for family dinners or casual gatherings.

Ingredients

  • 1 large can chicken broth
  • 2 cups chopped onion
  • 2 cups chopped celery
  • 2 cloves garlic, finely chopped
  • 2 tablespoons dried parsley
  • 2 whole bay leaves
  • 1 quart half and half
  • 1/2 pound bacon
  • 2 cups sliced carrots

Instructions

  1. Cut up bacon and cook in a deep pan until lightly browned.
  2. Add chopped onions, celery, and garlic to the bacon and sauté until onions are clear.
  3. Add chicken broth, potatoes, carrots, parsley, and bay leaves.
  4. Simmer until potatoes and carrots are fully cooked.
  5. Add half and half and heat, trying not to let it boil.
  6. Gradually add instant potatoes to thicken to desired consistency, starting with about a cup.
