Florentine Soup

Ingredients
- 4 slices bacon ⓘ
- 1 teaspoon ground thyme ⓘ
- 1 cup heavy cream ⓘ
- 1 cup shredded mozzarella cheese ⓘ
- 1 cup shredded cheddar cheese ⓘ
- 4 bags spinach
- 1 onion ⓘ
- 1 cup sliced mushroom ⓘ
- 1/2 teaspoon white pepper ⓘ
- 2 tablespoons flour ⓘ
- 1 teaspoon garlic powder ⓘ
- 2 cups milk ⓘ
- 1 teaspoon ground mustard ⓘ
- 2 tablespoons butter ⓘ
- 1 tablespoon chicken soup base
Instructions
- Cook bacon until crispy, then crumble and set aside.
- In a large pot, melt butter over medium heat.
- Add chopped onion and sliced mushrooms; sauté until softened.
- Sprinkle flour and stir to form a roux; cook for 1-2 minutes.
- Gradually whisk in milk and chicken soup base, stirring constantly.
- Add heavy cream, white pepper, ground thyme, ground mustard, garlic powder, and white pepper; stir well.
- Bring the mixture to a simmer and cook until slightly thickened.
- Add bags of spinach and cook until wilted.
- Stir in shredded mozzarella and cheddar cheeses until melted and smooth.
- Season with additional salt and pepper if needed.
- Serve hot, garnished with crispy bacon.
