Frog Eye Salad is a sweet, creamy dessert with pineapple, mandarin oranges, marshmallows, and macaroni, perfect for gatherings, potlucks, or festive occasions.

Ingredients

  • 1 cup De Pepe macaroni
  • 1 cup pineapple chunks
  • 2 cans mandarin oranges
  • 3 eggs
  • 1 cup miniature marshmallows
  • 2 cups cool whip
  • 1 cup sugar
  • 2 tablespoons flour
  • 1 cup coconut (optional)
  • dash of salt

Instructions

  1. Boil 1 cup of De Pepe macaroni in 4 cups of water for 12 minutes until water boils away.
  2. Set the cooked macaroni aside to cool.
  3. Drain pineapple chunks and mandarin oranges, reserving the juice from the oranges.
  4. Heat the orange juice and thicken it by cooking with 2 eggs, 2 tablespoons of flour, 1 cup of sugar, and a dash of salt until thickened.
  5. Allow the sauce to cool.
  6. Add the cooled sauce to the cooked macaroni and mix well.
  7. Cover and refrigerate the mixture overnight.
  8. The next morning, add the drained fruit, miniature marshmallows, and cool whip to the macaroni mixture.
  9. Stir until well combined and serve chilled.
