Ingredients

  • 1 1/2 lb. squash
  • 2 eggs
  • 1/4 c. milk
  • 3/4 c. bread crumbs
  • 1 c. grated sharp cheese
  • 2 Tbsp. margarine
  • 1 small onion

Instructions

  1. After cooking the squash, beat it in a bowl with a Mixmaster.
  2. Add the eggs, milk, grated onion, cheese, and bread crumbs to the squash mixture.
  3. Pour the mixture into a shallow casserole dish.
  4. Cover the casserole with additional bread crumbs.
  5. Dot the top with margarine or butter.
  6. Bake for about 45 minutes at 350°F until golden brown on top.
