Ingredients

  • 1 lb. deer roast, cooked and shredded or chopped
  • 1 pkg. (12-inch) flour tortillas
  • 1 can enchilada sauce
  • 2 c. grated Cheddar cheese or Monterey Jack cheese
  • 1 c. chopped onion

Instructions

  1. Grease a 9 x 13-inch baking pan.
  2. Warm the flour tortillas until they are pliable.
  3. Place 1/4 cup of shredded deer meat, chopped onion, and cheese in each tortilla, then roll it up.
  4. Arrange the rolled tortillas in the prepared pan.
  5. Pour the can of enchilada sauce over the assembled tortillas.
  6. Bake at 375°F (190°C) for 40 minutes.
  7. Garnish with sour cream and chopped green onions before serving.
