  1. Cube the deer meat into 1-inch pieces and season with salt and pepper.
  2. Marinate the meat in a large Ziploc bag for 2 hours in the refrigerator.
  3. Brown the deer meat and smoked pork sausage; remove and drain off the fat.
  4. Add chopped onion, chopped bell pepper, and garlic to the pan and cook for 2 to 3 minutes.
  5. Stir in the browned meat and sausage, then add enough water to cover the meat.
  6. Add steak sauce, tomato sauce, and Ro-Tel tomatoes to the mixture.
  7. Cover and cook for 2 hours, stirring occasionally.
  8. Season to taste and add chopped parsley 30 minutes before serving.
