Ingredients

  • 1 1/2 cups Great Northern beans
  • meaty ham bone
  • 1 cup diced onions
  • 1 cup diced potato
  • 1/2 cup diced celery
  • 1/2 to 1 cup diced carrots
  • 1 clove garlic

Instructions

  1. Soak beans overnight in 1 quart of water, then drain beans and measure liquid.
  2. Add enough water to make 2 quarts.
  3. Place soaked beans, water, and ham bone in a kettle.
  4. Cover and simmer for 2 hours.
  5. Add diced onions, diced potato, diced celery, diced carrots, and minced garlic.
  6. Simmer for 1 more hour.
  7. Remove meat from the bone and return it to the soup.
  8. Season to taste with salt and pepper.
  9. Serve piping hot.
  10. Any leftovers freeze well.
