Ingredients

  • 3 cups flour
  • 2 cups sugar
  • 2 teaspoons soda
  • 2 teaspoons cinnamon
  • 2 teaspoons vanilla
  • 1 1/2 cups oil
  • 2 cups grated carrots
  • 1 1/2 cups chopped pecans
  • 3 eggs
  • 1 small can crushed pineapple

Instructions

  1. Mix dry ingredients: flour, sugar, soda, and cinnamon.
  2. Add oil, vanilla, crushed pineapple, grated carrots, and chopped pecans to the dry mixture.
  3. Add eggs last and mix thoroughly.
  4. Pour batter into greased layer pans or a 9 x 13-inch pan.
  5. Bake at 350°F (175°C) for 1 hour.
  6. Allow the cake to cool completely.
  7. Frost as desired.
