Ingredients

  • 1/2 cup margarine
  • 1 egg
  • 1 teaspoon vanilla
  • 1 teaspoon grated orange or lemon peel
  • 1 1/3 cups pitted dates, chopped
  • 1 cup regular oats
  • 1/2 cup whole wheat flour
  • 1/2 cup wheat germ or oat bran
  • 1 teaspoon baking powder
  • 1/2 teaspoon allspice
  • 1/2 teaspoon nutmeg

Instructions

  1. Beat margarine and egg until creamy.
  2. Add vanilla, orange or lemon peel, and chopped dates; mix well.
  3. Mix oats, flour, wheat germ or oat bran, baking powder, and spices separately.
  4. Add the dry mixture to the margarine and egg mixture.
  5. Alternate adding skim milk while beating on low speed until well blended.
  6. Spread batter evenly into a well-greased 10 x 15-inch cookie sheet or shallow rimmed pan.
  7. Sprinkle with finely chopped nuts and press gently into the batter.
  8. Bake at 350°F (175°C) for about 25 minutes or until the center is firm.
  9. Cool before cutting into 2 x 3-inch bars. Makes 25 bars.
