- Preheat oven to 325°F.
- With an electric mixer, combine softened margarine, apple juice concentrate, fructose, and mashed banana. Beat until smooth.
- Stir in the egg and vanilla extract.
- In a separate bowl, mix together cinnamon, ginger, allspice, and baking soda, then add to the wet mixture.
- Gradually stir in the pumpkin and all-purpose flour until well combined.
- Fold in raisins (and nuts if desired).
- Spread the batter evenly into a 9 x 13-inch baking pan sprayed with nonstick vegetable coating.
- Bake at 325°F for 25 minutes or until the center is firm.
- Allow to cool before slicing into 20 servings.
