Ingredients

  • 1/2 cup margarine, softened
  • 1/4 cup granulated fructose
  • 1 egg
  • 2 teaspoons vanilla
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger
  • 1 teaspoon allspice
  • 1 teaspoon baking soda
  • 1/2 cup apple juice concentrate
  • 1/2 cup mashed banana

Instructions

  1. Preheat oven to 325°F.
  2. With an electric mixer, combine softened margarine, apple juice concentrate, fructose, and mashed banana. Beat until smooth.
  3. Stir in the egg and vanilla extract.
  4. In a separate bowl, mix together cinnamon, ginger, allspice, and baking soda, then add to the wet mixture.
  5. Gradually stir in the pumpkin and all-purpose flour until well combined.
  6. Fold in raisins (and nuts if desired).
  7. Spread the batter evenly into a 9 x 13-inch baking pan sprayed with nonstick vegetable coating.
  8. Bake at 325°F for 25 minutes or until the center is firm.
  9. Allow to cool before slicing into 20 servings.
