Ingredients

  • 2 c. raisins
  • 2 1/2 c. water
  • 1 1/2 c. sweet potatoes, mashed
  • 1/2 c. oil
  • 2 eggs
  • 1 1/4 c. flour
  • 1 banana, mashed
  • 1 tsp. soda
  • 1/2 tsp. salt
  • 1 tsp. vanilla
  • 2 Tbsp. liquid sweetener
  • 1 c. pecans, chopped

Instructions

  1. Boil raisins in water until all water is gone.
  2. Cool the raisins completely.
  3. Add all other ingredients to the cooled raisins.
  4. Mix well until batter is smooth and combined.
  5. Pour the batter into a loaf pan and bake at 350°F for 45 minutes.
