Ingredients

  • 2 lb. lean ground beef
  • 1 (16 oz.) can stewed tomatoes
  • 1 (12 oz.) can tomato paste
  • 1 green pepper
  • 1 large onion
  • 3 to 4 ribs celery
  • 2 cloves garlic
  • 2 eggs
  • 1 box pork flavor stuffing mix
  • salt and pepper

Instructions

  1. Saute onion, green pepper, garlic, and celery until tender.
  2. Add the rest of the ingredients, saving half the tomato paste and stewed tomatoes.
  3. Spray a 3-quart baking dish with cooking spray and add the mixture.
  4. Top with half the remaining tomato paste and stewed tomatoes.
  5. Bake at 400°F for 1 hour, covered.
  6. Reduce temperature to 350°F and bake uncovered for an additional 30 minutes.
  7. Cool in the pan, then turn out onto a platter to slice.
