Dilled Cauliflower Salad

A refreshing cauliflower salad with peas, dill pickle, and herbs, dressed in mayonnaise. Perfect for light lunches or as a side dish at gatherings.

Ingredients

  • 1/2 head fresh cauliflower
  • 1 cup frozen peas
  • 1 large dill pickle, chopped
  • 1/2 teaspoon dill weed
  • 1 teaspoon chopped onion
  • 1 teaspoon parsley
  • 1/4 teaspoon garlic powder
  • mayonnaise as needed

Instructions

  1. Bring 1/2 inch of water to a boil in a saucepan; add chopped cauliflower and frozen peas.
  2. Cook for 4 minutes.
  3. Run cold water over drained vegetables to cool.
  4. Drain well.
  5. Add chopped dill pickle, dill weed, chopped onion, parsley, garlic powder, and enough mayonnaise to cover.
  6. Serve cold.
