Ingredients

  • 1 1/2 cups enriched white cornmeal
  • 3 tablespoons flour
  • 1 teaspoon salt
  • 1 teaspoon soda
  • 2 cups buttermilk
  • 1 egg
  • 2 tablespoons bacon drippings or melted butter

Instructions

  1. Sift together the cornmeal, flour, salt, and soda.
  2. Add buttermilk, egg, and bacon drippings or melted butter, mixing just until the dry ingredients are moistened.
  3. Pour the batter into a greased, hot skillet.
  4. Bake in a 450°F (232°C) oven for 20-25 minutes until golden and cooked through.
  5. Serve warm with butter.
