Ingredients

  • 1/4 tsp. fresh black pepper
  • 16 oz. brine packed grape leaves
  • 3/4 c. fresh lemon juice
  • 1 c. heated vegetable stock

Instructions

  1. Toast pine nuts in a heavy skillet over medium heat, stirring frequently, for about 5 minutes until golden.
  2. Cool the toasted pine nuts.
  3. Wash rice in cold water and drain.
  4. Heat 3 tablespoons of olive oil in a saute pan over medium-high heat.
  5. Add yellow onion and saute until just soft.
  6. Transfer the sautéed onion to a large bowl.
  7. Add rice, 1/2 cup of olive oil, green onions, parsley, mint, pine nuts, cinnamon, allspice, salt, and pepper to the bowl.
  8. Mix thoroughly to combine all ingredients.
  9. Prepare grape leaves by rinsing and draining.
  10. Place a grape leaf smooth side down on a flat surface.
  11. Put about a teaspoon of filling near the stem end of the leaf.
  12. Fold in the sides and roll tightly to enclose the filling.
  13. Repeat with remaining grape leaves and filling.
  14. Arrange the stuffed grape leaves in a single layer in a pot, seam side down.
  15. Pour in 1 cup of heated vegetable stock and 3 tablespoons of olive oil.
  16. Add lemon juice over the top.
  17. Cover the pot and simmer over low heat for about 20 minutes, until the rice is tender and the leaves are cooked.
