Ingredients
- 2 cans asparagus ⓘ
- 3 cooked chicken breasts ⓘ
- 1 teaspoon lemon juice ⓘ
- 2 cans cream of chicken soup ⓘ
- 1/4 teaspoon curry powder ⓘ
- 3/4 cup mayonnaise ⓘ
- 1 cup grated sharp cheese ⓘ
- 1 to 1.5 cups crushed corn flakes ⓘ
- 1 (4-ounce) can chopped green chile
- 1 (10-ounce) can enchilada sauce ⓘ
- 1 (5-ounce) can evaporated milk ⓘ
- 2 cups chicken broth ⓘ
- 1.5 dozen corn tortillas ⓘ
- 2 cups grated Longhorn cheese ⓘ
- 1 1/2 dozen corn tortillas
- 2 c. grated longhorn cheese ⓘ
Instructions
- Saute onions and green chile in butter until tender.
- Combine all liquids—cream of chicken soup, enchilada sauce, evaporated milk, chicken broth—and add the sautéed onions and chile mixture.
- Tear the corn tortillas into pieces and layer them in a casserole dish with the pulled chicken and grated cheese, ending with a cheese layer.
- Pour the prepared liquid mixture over the layered ingredients.
- Refrigerate the casserole overnight or for several hours.
- Bake at 350°F (175°C) for 1 hour until hot and bubbly.
