Ingredients

  • 2 cans asparagus
  • 3 cooked chicken breasts
  • 1 teaspoon lemon juice
  • 2 cans cream of chicken soup
  • 1/4 teaspoon curry powder
  • 3/4 cup mayonnaise
  • 1 cup grated sharp cheese
  • 1 to 1.5 cups crushed corn flakes
  • 1 (4-ounce) can chopped green chile
  • 1 (10-ounce) can enchilada sauce
  • 1 (5-ounce) can evaporated milk
  • 2 cups chicken broth
  • 1.5 dozen corn tortillas
  • 2 cups grated Longhorn cheese
  • 1 1/2 dozen corn tortillas
  • 2 c. grated longhorn cheese

Instructions

  1. Saute onions and green chile in butter until tender.
  2. Combine all liquids—cream of chicken soup, enchilada sauce, evaporated milk, chicken broth—and add the sautéed onions and chile mixture.
  3. Tear the corn tortillas into pieces and layer them in a casserole dish with the pulled chicken and grated cheese, ending with a cheese layer.
  4. Pour the prepared liquid mixture over the layered ingredients.
  5. Refrigerate the casserole overnight or for several hours.
  6. Bake at 350°F (175°C) for 1 hour until hot and bubbly.
