Ingredients

  • 3 cups flour
  • 1 1/2 cups sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 2 cups shredded, unpacked zucchini
  • 1 cup chopped nuts
  • 1 cup raisins
  • 3 eggs
  • 1 cup oil

Instructions

  1. In a large bowl, stir together dry ingredients, shredded zucchini, chopped nuts, and raisins.
  2. In another bowl, beat eggs and oil.
  3. Pour the egg and oil mixture over the dry ingredients and stir until moistened.
  4. Turn the batter into a greased 9 x 5 x 3-inch loaf pan.
  5. Bake in a 350°F (175°C) oven for 1 hour and 30 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool in the pan for 10 minutes before removing.
  7. Makes 1 large loaf or 2 small loaves.
  8. Double the recipe to make 3 loaves.
