- In a large bowl, stir together dry ingredients, shredded zucchini, chopped nuts, and raisins.
- In another bowl, beat eggs and oil.
- Pour the egg and oil mixture over the dry ingredients and stir until moistened.
- Turn the batter into a greased 9 x 5 x 3-inch loaf pan.
- Bake in a 350°F (175°C) oven for 1 hour and 30 minutes or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes before removing.
- Makes 1 large loaf or 2 small loaves.
- Double the recipe to make 3 loaves.
