Ingredients

  • 2 Tbsp low-fat margarine
  • 2 Tbsp parsley
  • 1 clove garlic
  • 4 boneless skinless chicken breasts
  • 1/2 tsp lite salt
  • 3 Tbsp white wine
  • 3 slices whole wheat bread
  • 1 tsp lemon juice
  • 1/2 tsp freshly ground black pepper

Instructions

  1. Melt the margarine and brush the bottom of a 9-inch baking dish with some of the melted margarine.
  2. Put the bread, parsley, and garlic in a blender or food processor and make crumbs.
  3. In a small bowl, mix the bread crumbs with the remaining margarine and lemon juice.
  4. Sprinkle the chicken breasts with lite salt and black pepper, then place them in the baking dish.
  5. Add the white wine to the dish and bake for 5 minutes.
  6. Turn the chicken breasts over and bake for another 5 minutes.

Tips & Substitutions

For added flavor, consider marinating the chicken breasts in the wine and lemon juice for an hour before cooking. If you don't have whole wheat bread, any bread can work, but whole grain adds a nutty taste. Fresh herbs can be substituted for parsley, like basil or thyme, if desired.

Serving Suggestions

This dish pairs beautifully with a side of steamed vegetables or a fresh salad. Consider serving it with a light pasta tossed in olive oil and garlic for a complete meal. For a heartier option, serve alongside mashed potatoes or quinoa to soak up the delicious sauce.

Storage & Reheating

Store any leftover chicken in an airtight container in the refrigerator for up to three days. To reheat, place the chicken in a baking dish with a splash of white wine or broth, cover with foil, and warm in the oven at 350°F until heated through.

Yes, you can use frozen chicken breasts, but make sure to fully thaw them in the refrigerator beforehand to ensure even cooking. Adjust the baking time slightly if they are still icy when placed in the oven.

What can I substitute for white wine?

If you prefer not to use wine, chicken broth or a mixture of vinegar and water can be a great substitute. This will maintain moisture in the dish without altering the flavor significantly.

How can I make this recipe healthier?

To make this dish healthier, reduce the amount of margarine and use a light cooking spray instead. You can also increase the vegetable content by serving it with a side of steamed greens or a colorful salad.
