Ingredients

  • 1/2 cup whole wheat flour
  • 1 cup all-purpose flour
  • 3/4 cup wheat bran
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 2 egg whites
  • 2 tablespoons canola oil
  • 1/4 cup molasses
  • 3/4 cup unsweetened applesauce
  • 1/4 cup skim milk
  • 1 medium apple, finely chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Spray muffin tins with nonstick cooking spray.
  3. In a large bowl, mix together whole wheat flour, all-purpose flour, wheat bran, baking powder, baking soda, and cinnamon until thoroughly combined.
  4. In a medium bowl, beat egg whites until frothy.
  5. Stir in canola oil, molasses, applesauce, skim milk, and chopped apple, mixing well after each addition.
  6. Pour the wet ingredients into the dry ingredients and stir until just combined.
  7. Divide the batter evenly among the muffin cups.
  8. Bake for 15 minutes or until a toothpick inserted into the center comes out clean.
