Ingredients

  • 1 cup whole wheat flour
  • 1/3 cup uncooked whole wheat hot cereal
  • 3 packages sugar substitute
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon apple pie spice
  • 2 eggs or egg substitute
  • 1 cup unsweetened applesauce
  • 1/4 teaspoon almond flavoring

Instructions

  1. Stir together flour, cereal, sugar substitute, baking powder, baking soda, and spice; set aside.
  2. In a separate bowl, beat eggs or egg substitute, then add applesauce and almond flavoring.
  3. Combine wet ingredients with dry ingredients until just mixed.
  4. Fold in raisins and minced apple.
  5. Divide batter evenly into greased muffin tins.
  6. Bake at 375°F (190°C) for 20-25 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  7. Allow muffins to cool slightly before removing from tins.
