Ingredients

  • 2 cups self-rising flour
  • 1/2 teaspoon dry mustard
  • 1/8 teaspoon ground red pepper
  • 2 tablespoons margarine or butter
  • 3/4 cup shredded Swiss cheese
  • 3/4 cup buttermilk
  • 1 egg
  • 1 egg yolk
  • 1 tablespoon water
  • grated Parmesan cheese

Instructions

  1. Preheat oven to 450°F and lightly grease a cookie sheet.
  2. In a bowl, mix self-rising flour, dry mustard, and ground red pepper.
  3. Cut in margarine or butter with a pastry blender until the mixture resembles fine crumbs.
  4. Stir in shredded Swiss cheese, buttermilk, and egg until a dough forms.
  5. Turn dough onto a well-floured board and coat with flour.
  6. Knead lightly about 10 times.
  7. Roll or pat the dough to 1/2-inch thickness.
  8. Cut with a floured 2 1/2-inch biscuit cutter and place on the prepared cookie sheet.
  9. Mix egg yolk and water, then brush over the biscuits.
  10. Sprinkle with grated Parmesan cheese.
  11. Bake for 10 to 12 minutes or until golden.
  12. Serve warm.
