  • 3 to 4 cups bread stuffing
  • 2 cups broth
  • 1 cup cream of chicken soup
  • 1 medium onion, chopped
  • Celery, chopped
  • 1/4 cup oleo or butter
  • 2 to 3 eggs, beaten
  • Poultry seasoning or sage to taste

Instructions

  1. Butter the bottom of a large pan.
  2. Place half of the cooked, boned chicken in the pan.
  3. Mix the cream of chicken soup, bread stuffing, beaten eggs, and seasoning; spread half of this mixture over the chicken.
  4. Add the remaining chicken on top, then cover with the rest of the bread stuffing and spices.
  5. Bake for 1 hour at 350°F until browned.

Tips & Substitutions

For a richer flavor, consider using homemade broth instead of store-bought. You can substitute the cream of chicken soup with a homemade white sauce or a can of mushroom soup for a different taste. If you prefer a lighter dish, use less bread stuffing or opt for a whole grain version. Don't forget to season the stuffing generously with poultry seasoning or sage for an extra punch.

Serving Suggestions

Serve this dish with a side of steamed green beans or a fresh garden salad for a balanced meal. It pairs beautifully with Betsy'S Favorite Chicken And Stuffing, making it a great option for family gatherings. Consider drizzling some gravy over the top for added flavor, and don't forget to have some warm dinner rolls on the side.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place the chicken in a preheated oven at 350°F for about 20-30 minutes or until heated through. You can also microwave individual portions, but be cautious as this method may dry out the chicken.

Frequently Asked Questions

Can I use uncooked chicken for this recipe?

It's best to use cooked chicken for this recipe to ensure even cooking and flavor absorption. If you only have raw chicken, consider cooking it first or using a recipe like Chicken Dinner Bake that incorporates raw chicken and has a different cooking method.

Can I make this recipe ahead of time?

Absolutely! You can prepare the dish up to the baking step and refrigerate it overnight. Just cover it tightly with plastic wrap or foil. When you're ready to bake, remove it from the fridge and allow it to come to room temperature before baking it in the oven.

What can I use instead of eggs in this recipe?

If you're looking for an egg substitute, you can use 1/4 cup of unsweetened applesauce or 1/4 cup of mashed bananas per egg. Alternatively, a mixture of 1 tablespoon of ground flaxseed mixed with 2.5 tablespoons of water can also work well for binding the stuffing.
