Ingredients

  • 1 envelope dry turkey noodle soup mix
  • 1 (3 oz.) can diced mushrooms, drained
  • Reserved mushroom liquid
  • 6 oz. can evaporated milk
  • 1/3 cup butter
  • 1/4 cup chopped onions
  • 1/3 cup flour
  • 1/4 teaspoon salt
  • Dash of pepper
  • 2 cups diced cooked chicken

Instructions

  1. Combine the dry turkey noodle soup mix with 1 1/2 cups water and bring to a boil. Reduce heat and simmer for 5 minutes.
  2. Add the mushroom liquid and evaporated milk to the soup mixture.
  3. In a large skillet, melt the butter over medium heat.
  4. Cook the chopped onions until tender, but not browned.
  5. In a small bowl, blend the flour, salt, and pepper.
  6. Add the soup mixture to the skillet and cook, stirring, until thick and bubbly.
  7. Add the drained mushrooms, diced cooked chicken, frozen peas, and pimiento to the mixture.
  8. Pour the mixture into a 1 1/2-quart casserole dish.
  9. Bake at 350°F for 45 minutes.
