Ingredients

  • 6 to 8 cups flour
  • 1 teaspoon salt
  • 1 1/2 tablespoons cinnamon
  • 2 tablespoons ginger
  • 1/4 teaspoon nutmeg
  • 1 cup shortening
  • 1 cup sugar
  • 1 egg
  • 2 cups molasses
  • 2 tablespoons vinegar
  • 4 teaspoons baking soda
  • 1 cup boiling water

Instructions

  1. Sift 6 cups of flour with salt and spices (cinnamon, ginger, nutmeg).
  2. Cream together the shortening and sugar until light and fluffy.
  3. Add the egg and beat until well combined and light in color.
  4. Mix in the molasses and vinegar until smooth.
  5. Gradually add the sifted dry ingredients to the wet mixture, mixing well.
  6. Dissolve the baking soda in the boiling water and add to the mixture, stirring until incorporated.
  7. Allow the dough to cool slightly, then drop by small tablespoonfuls onto a baking sheet.
  8. Sprinkle the cookies with additional sugar if desired.
  9. Bake at 350° to 375°F for 8 to 10 minutes until the edges are set.
  10. Cool the cookies on a wire rack before serving.
