- Sift 6 cups of flour with salt and spices (cinnamon, ginger, nutmeg).
- Cream together the shortening and sugar until light and fluffy.
- Add the egg and beat until well combined and light in color.
- Mix in the molasses and vinegar until smooth.
- Gradually add the sifted dry ingredients to the wet mixture, mixing well.
- Dissolve the baking soda in the boiling water and add to the mixture, stirring until incorporated.
- Allow the dough to cool slightly, then drop by small tablespoonfuls onto a baking sheet.
- Sprinkle the cookies with additional sugar if desired.
- Bake at 350° to 375°F for 8 to 10 minutes until the edges are set.
- Cool the cookies on a wire rack before serving.
