Ingredients

  • 1 large onion, chopped
  • 1 qt. canned tomatoes
  • 1 medium carrot, grated
  • 1 small beet
  • 6 medium potatoes
  • 1 diced carrot
  • 1 cup diced celery
  • 1/2 lb. butter
  • 1 cup whipping cream
  • 1 green pepper
  • 1 medium head cabbage
  • salt and pepper to taste

Instructions

  1. Place 1/2 pound of butter and chopped onion in a large saucepan and simmer until onion is shiny.
  2. Add canned tomatoes, finely grated carrot, grated beet, and chopped green pepper; boil for 20 minutes, stirring constantly.
  3. Place 3 quarts of boiling water in a large kettle. Add 3 potatoes cut in half, remaining beet, diced carrot, diced celery, and salt.
  4. Boil until potatoes are done. Remove the potatoes and mash them.
  5. Add the rest of the butter and the whipping cream. Add 3 diced potatoes and let boil for 1 minute.
  6. Add the boiled tomato mixture, shredded cabbage, and mashed potatoes to the kettle.
  7. Bring the soup to a boil. Add chopped green pepper, dill, and black pepper.
  8. Remove from heat, cover with a lid, and serve hot.
