Tips & Substitutions

To enhance flavor, consider using a mix of ground beef and ground turkey for a lighter option. You can also substitute the mild enchilada sauce with a spicier version if you prefer heat. For a vegetarian version, swap the meat for black beans or lentils. Layering the tortillas in a staggered manner can help prevent them from becoming soggy.

Serving Suggestions

Serve the enchilada casserole with a side of Mexican rice or a fresh salad for a complete meal. Top with chopped cilantro, sour cream, or sliced avocados for added flavor. This dish also pairs beautifully with Patricia Hawkins Liston'S Sopa De Fideo (One Dish Meal) for a comforting dinner experience.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place individual portions in the microwave for about 2-3 minutes or cover and heat in the oven at 350°F until warmed through. Adding a splash of water before reheating can help maintain moisture.
