  • 1 lb. split peas, rinsed

  • 3 c. leeks
  • 2 Tbsp. butter
  • 1/2 tsp. minced garlic
  • 2 c. chopped celery
  • 1/2 c. light cream
  • minced parsley

Instructions

  1. Bring the split peas, ham hocks, and water to a boil.
  2. Skim off the froth and simmer partially covered for 1 hour.
  3. Add the slab bacon and continue simmering for another hour.
  4. In a large skillet, sauté the leeks in butter for 8 minutes.
  5. Add minced garlic and sauté for 2 minutes.
  6. Add the leeks and garlic to the soup along with the chopped celery and simmer for 1 hour.
  7. Remove the ham hocks and cut the meat into pieces.
  8. Return the meat to the soup and add the halved Polish sausage, sliced into 1/4 inch pieces.
  9. Simmer covered for 10 minutes.
  10. Let the soup stand overnight, uncovered.
  11. Reheat the soup and stir in the white wine and light cream.
  12. Season with salt and pepper to taste.
  13. Sprinkle with minced parsley before serving.
