Tips & Substitutions

For an extra layer of flavor, consider adding spices like cumin or chili powder to the hamburger mixture. You can easily substitute ground turkey or chicken for the hamburger for a leaner option. If you prefer a spicier kick, use a hotter picante sauce or add diced jalapeños to the filling. This recipe is versatile, similar to Baked Mexican Eggs, allowing you to adjust ingredients based on personal preference.

Serving Suggestions

These enchiladas serve well with a side of nacho chips for added crunch, or you can serve them alongside a fresh salad for a lighter meal. They pair beautifully with Dead Man'S Dip for a delicious appetizer. For a complete meal, consider serving them with a side of Mexican rice or refried beans.

Storage & Reheating

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place the enchiladas in a baking dish, cover with foil, and warm them in a preheated oven at 350°F for about 15-20 minutes until heated through. You can also microwave individual portions for convenience.

Frequently Asked Questions

Can I make these enchiladas ahead of time?

Yes, you can prepare the enchiladas in advance and store them unbaked in the refrigerator for up to 24 hours. When ready to eat, simply bake them as directed. This makes them a great option for meal prep or entertaining.

What can I use instead of sour cream?

If you're looking for a substitute for sour cream, Greek yogurt works wonderfully. It offers a similar tangy flavor and creamy texture. For a dairy-free option, consider using cashew cream or a dairy-free yogurt alternative.

How can I make the dish vegetarian?

To make these enchiladas vegetarian, simply omit the hamburger and replace it with a mixture of sautéed vegetables such as bell peppers, zucchini, and mushrooms, or use black beans for protein. This variation is just as delicious and allows you to explore more Mexican recipes.
