Ingredients

  • 2 (10 oz.) packages frozen asparagus or broccoli spears
  • 2 cups sliced chicken or 3 boned chicken breasts
  • 2 cans cream of chicken soup
  • 2/3 to 1 cup mayonnaise
  • 1/2 teaspoon curry powder
  • 1/2 cup soft bread crumbs or cracker crumbs
  • 1 tablespoon melted butter
  • 1 teaspoon lemon juice
  • 1/2 cup grated cheese
  • pimiento strips

Instructions

  1. Cook the frozen asparagus or broccoli according to package directions and arrange in a greased baking dish.
  2. Place sliced chicken or whole chicken breasts on top of the vegetables.
  3. In a bowl, combine the cream of chicken soup, mayonnaise, lemon juice, and curry powder to make the sauce.
  4. Pour the sauce over the chicken and vegetables.
  5. Sprinkle grated cheese on top.
  6. Melt butter and mix with bread crumbs or cracker crumbs, then sprinkle over the casserole.
  7. Garnish with pimiento strips.
  8. Bake at 350°F (175°C) for 25 to 30 minutes until hot and bubbly.
