Ingredients
- 2 (10 oz.) packages frozen asparagus or broccoli spears ⓘ
- 2 cups sliced chicken or 3 boned chicken breasts ⓘ
- 2 cans cream of chicken soup ⓘ
- 2/3 to 1 cup mayonnaise ⓘ
- 1/2 teaspoon curry powder ⓘ
- 1/2 cup soft bread crumbs or cracker crumbs ⓘ
- 1 tablespoon melted butter ⓘ
- 1 teaspoon lemon juice ⓘ
- 1/2 cup grated cheese ⓘ
- pimiento strips
Instructions
- Cook the frozen asparagus or broccoli according to package directions and arrange in a greased baking dish.
- Place sliced chicken or whole chicken breasts on top of the vegetables.
- In a bowl, combine the cream of chicken soup, mayonnaise, lemon juice, and curry powder to make the sauce.
- Pour the sauce over the chicken and vegetables.
- Sprinkle grated cheese on top.
- Melt butter and mix with bread crumbs or cracker crumbs, then sprinkle over the casserole.
- Garnish with pimiento strips.
- Bake at 350°F (175°C) for 25 to 30 minutes until hot and bubbly.
