Easy Enchilada Casserole

Ingredients

  • 1 lb. lean ground beef
  • 1/2 cup frozen chopped onion
  • 1 (8 oz.) can drained whole kernel corn
  • 1 (8 oz.) can tomato sauce
  • 2/3 cup mild enchilada sauce or mild salsa
  • 1 (4 oz.) can diced green chili peppers, drained
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 10 (6-inch) corn tortillas
  • 1 cup shredded Cheddar cheese

Instructions

  1. Brown ground beef and onion over medium heat until meat is no longer pink.
  2. Drain off fat.
  3. Stir in corn, tomato sauce, enchilada sauce or salsa, green chili peppers, chili powder, and salt into the meat mixture.
  4. Cook until bubbly.
  5. Spoon 1/3 of the meat mixture into the bottom of a 2-quart rectangular baking dish.
  6. Place 5 tortillas on top of the meat mixture.
  7. Spoon half of the remaining meat mixture over the tortillas.
  8. Sprinkle half of the cheese over the meat.
  9. Repeat with remaining tortillas, meat, and cheese.
  10. Bake at 350°F for 20 to 30 minutes or until hot all the way through.
