A quick and hearty microwave lasagne with rich meat sauce, creamy cheese layers, and melted mozzarella, perfect for busy weeknights or comforting family dinners.

Ingredients

  • 1 lb. ground beef
  • 1 (32 oz.) jar spaghetti sauce
  • 1/2 cup water
  • 2 cups Ricotta or cottage cheese
  • 1 egg
  • 1/2 teaspoon black pepper
  • 8 lasagne noodles
  • 8 oz. sliced Mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. In a large glass bowl, crumble the ground beef.
  2. Microwave at High for 3 to 6 minutes or until the beef is no longer pink. Stir once and drain excess fat.
  3. Stir in the spaghetti sauce and water.
  4. In a separate bowl, combine Ricotta cheese, egg, and black pepper.
  5. In an oblong dish, spoon 1/2 cup of the sauce to cover the bottom.
  6. Layer uncooked lasagne noodles, then spread a layer of the cheese mixture, add sliced mozzarella, and repeat layers with sauce, noodles, cheese, and mozzarella, ending with sauce and Parmesan cheese on top.
  7. Cover with plastic wrap and microwave at High for 8 minutes.
  8. Continue cooking at Medium-low for 30 minutes or until the noodles are fork tender.
