- Saute ground beef until nearly cooked.
- Slice onion, carrot, green pepper, and celery.
- Check if eggplant is tender and fresh; if so, leave skin on and cut into cubes.
- If not tender, peel the eggplant.
- Spray a casserole dish with Pam.
- Combine sliced vegetables, cooked meat, Italian seasoning, and some grated cheese; pour into the casserole dish.
- Do not add mozzarella cheese at this stage.
- Bake the casserole at 350°F for about 1 to 1 1/4 hours until cooked.
- Sprinkle grated cheese on top, then add mozzarella cheese.
- Allow the heat from the food to melt the cheese before serving.
