A hearty eggplant casserole packed with savory ground beef, fresh vegetables, melted cheese, and Italian seasonings, perfect for a comforting family dinner or casual gathering.

Ingredients

  • 1 lb. lean ground beef
  • 1 large onion
  • 1 carrot
  • 1 green pepper
  • 1 stalk celery
  • 1/2 lb. mushrooms
  • 1 medium eggplant
  • 1/2 jar spaghetti sauce
  • Italian seasoning
  • Mozzarella cheese
  • grated cheese

Instructions

  1. Saute ground beef until nearly cooked.
  2. Slice onion, carrot, green pepper, and celery.
  3. Check if eggplant is tender and fresh; if so, leave skin on and cut into cubes.
  4. If not tender, peel the eggplant.
  5. Spray a casserole dish with Pam.
  6. Combine sliced vegetables, cooked meat, Italian seasoning, and some grated cheese; pour into the casserole dish.
  7. Do not add mozzarella cheese at this stage.
  8. Bake the casserole at 350°F for about 1 to 1 1/4 hours until cooked.
  9. Sprinkle grated cheese on top, then add mozzarella cheese.
  10. Allow the heat from the food to melt the cheese before serving.
