Ingredients

  • 1 lb. fresh or frozen flounder fillets
  • 1 slightly beaten egg white
  • 3 Tbsp. frozen grapefruit or orange juice concentrate, thawed
  • 1 Tbsp. Worcestershire sauce
  • 1/2 cup crushed rich round crackers
  • 1/4 cup toasted wheat germ

Instructions

  1. Thaw fish if frozen and pat dry with paper towels.
  2. Combine beaten egg white, grapefruit or orange juice concentrate, and Worcestershire sauce in a bowl.
  3. In another bowl, mix crushed crackers and toasted wheat germ.
  4. Dip fish fillets into the egg white mixture, then coat with the crumb mixture.
  5. Arrange the coated fillets in a 13 x 9 x 2-inch baking dish, tucking under thin edges for even thickness.
  6. Drizzle melted butter or margarine evenly over the fish.
  7. Bake in a 500°F oven for 8 to 10 minutes or until fish flakes easily with a fork.
