Ingredients

  • 8 oz. cream cheese
  • 3 Tbsp. blue cheese
  • 8 3/4 oz. can crushed pineapple, drained
  • 1/2 cup chopped pecans
  • 1 tsp. chopped candied ginger
  • 3 oz. cream cheese
  • 1/4 cup milk
  • 2 cups shredded sharp Cheddar cheese
  • 1 tsp. grated onion

Instructions

  1. Combine the first five ingredients (cream cheese, blue cheese, pineapple, chopped pecans, candied ginger) and blend well.
  2. Spoon the mixture into a 1-quart mold and chill.
  3. Combine the next five ingredients (cream cheese, milk, shredded sharp Cheddar cheese, grated onion) and blend well.
  4. Spread the second mixture over the first layer in the mold.
  5. Refrigerate overnight until firm, then unmold.
  6. Garnish the top layer with coconut and pecan halves if desired.
