  • 1 bell pepper, chopped
  • 2 ribs celery, chopped
  • 1 1/2 cups uncooked rice
  • 2 cups beef consomme soup
  • 1 stick margarine
  • 2 teaspoons Creole seasoning

Instructions

  1. Spray the bottom of your rice cooker very well with Pam or butter.
  2. Mix all ingredients including mushrooms with liquid, onion, bell pepper, celery, rice, beef consomme, margarine, and Creole seasoning.
  3. Cook in the rice cooker the length of time required by your cooker, stirring occasionally if needed.
  4. Adjust cooking time if you prefer wetter or drier rice.
  5. You can also cook this on the stovetop, using the same cooking time as preparing rice.

Tips & Substitutions

For extra flavor, consider adding cooked sausage or shrimp to the jambalaya. If you don't have beef consomme, chicken broth can be a suitable substitute. Adjust the Creole seasoning to taste, and feel free to add diced tomatoes for a bit of acidity. Stir occasionally during cooking to ensure even texture and avoid sticking.

Serving Suggestions

Serve the jambalaya hot, garnished with fresh parsley or green onions for a pop of color. It pairs wonderfully with a side of French Bread With Biloxi Butter for dipping. For a complete meal, consider serving it alongside a light salad or some steamed vegetables to balance the richness of the dish.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, add a splash of water or broth to prevent drying out and warm in the microwave or stovetop until heated through. This dish can also be frozen for up to 2 months; just thaw before reheating.
