Ingredients

  • 2 lb. boneless, skinless chicken breasts
  • 1 c. white cooking wine
  • 1/4 c. grated Parmesan or Romano cheese
  • 1 can artichoke hearts, sliced
  • flour or other fried chicken coating
  • 1 (10 oz.) can chicken broth
  • salt
  • pepper
  • garlic powder
  • parsley

Instructions

  1. Fry chicken using desired coating, do not overcook.
  2. Season with salt, pepper, parsley, and garlic powder, then drain remaining oil from the pan.
  3. Add white wine, chicken broth, sliced mushrooms, and artichoke hearts to the pan.
  4. Sprinkle grated Parmesan or Romano cheese over the chicken.
  5. Simmer, covered, for 10 to 15 minutes.
  6. Serve with noodles.
