Ingredients

  • 1/4 cup butter or margarine
  • 2 medium onions, chopped
  • 2 cups chopped celery
  • 1 garlic clove, minced
  • 1/2 cup flour
  • 1 large potato, cut into 1/2-inch cubes
  • shredded Cheddar cheese
  • 4 cups milk
  • 4 cups chicken broth
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon marjoram
  • 4 cups chopped fresh asparagus, cooked and drained
  • salt and pepper to taste

Instructions

  1. In a Dutch oven, melt the butter over medium heat.
  2. Saute chopped onions, chopped celery, and minced garlic until tender.
  3. Stir in the flour and cook for 1-2 minutes.
  4. Add the cubed potato, milk, chicken broth, dried thyme, and marjoram.
  5. Cook over low heat, stirring occasionally, until the potato is tender and the soup is thickened, about 20 to 30 minutes.
  6. Add the chopped asparagus, salt, and pepper, and heat through.
  7. Serve the chowder hot, topped with grated Cheddar cheese.
