Ingredients
- 1/4 cup butter or margarine ⓘ
- 2 medium onions, chopped ⓘ
- 2 cups chopped celery ⓘ
- 1 garlic clove, minced ⓘ
- 1/2 cup flour ⓘ
- 1 large potato, cut into 1/2-inch cubes ⓘ

- 4 cups milk ⓘ
- 4 cups chicken broth ⓘ
- 1/2 teaspoon dried thyme ⓘ
- 1/2 teaspoon marjoram ⓘ
- 4 cups chopped fresh asparagus, cooked and drained ⓘ
- salt and pepper to taste ⓘ
Instructions
- In a Dutch oven, melt the butter over medium heat.
- Saute chopped onions, chopped celery, and minced garlic until tender.
- Stir in the flour and cook for 1-2 minutes.
- Add the cubed potato, milk, chicken broth, dried thyme, and marjoram.
- Cook over low heat, stirring occasionally, until the potato is tender and the soup is thickened, about 20 to 30 minutes.
- Add the chopped asparagus, salt, and pepper, and heat through.
- Serve the chowder hot, topped with grated Cheddar cheese.
