Ingredients

  • 1 lb. large shrimp
  • 1 large onion
  • 1 green pepper
  • 1 1/2 c. coarsely chopped celery
  • 2 c. sliced fresh mushrooms
  • 1/2 c. margarine
  • 2 Tbsp. cornstarch

Instructions

  1. Cook the shrimp in about one quart of boiling salted water for 5 minutes, then remove and clean them.
  2. Set aside the cooked shrimp and save the shrimp water.
  3. Saute the chopped onion, green pepper, and celery in margarine until the onions are transparent.
  4. Add the sliced mushrooms and cook for one minute more.
  5. Pour in the shrimp water and heat the mixture thoroughly.
  6. Dissolve the cornstarch in water and add to the mixture, cooking just until thick and clear, about 1 minute.
  7. Add the cooked shrimp to the hot mixture and serve over cooked rice.
  8. Pass the soy sauce on the side.
