Easy Spinach Soup

Ingredients

  • 2 1/2 Tbsp. butter
  • 1/2 cup chopped scallions
  • 1/2 cup finely chopped carrots
  • 1 clove garlic finely chopped
  • 6 cups chicken broth
  • 1/2 cup small pasta or rice
  • 10 cups washed, steamed, coarsely chopped spinach

Instructions

  1. In a large saucepan, melt 2 1/2 tablespoons of butter.
  2. Add the chopped carrots, scallions, and finely chopped garlic; sauté until the scallions are soft.
  3. Bring the chicken broth to a boil, then stir in the small pasta or rice.
  4. Simmer for 5 to 10 minutes until the pasta or rice is cooked.
  5. Just before serving, stir the washed, steamed, coarsely chopped spinach into the hot liquid.
  6. Cook for two to three minutes until the spinach is tender.
  7. Add salt and pepper to taste.
  8. Serve topped with Parmesan cheese and/or croutons if desired.
