Ingredients

  • 3 cups grated zucchini
  • 1 cup dry rice
  • 1 can cream of mushroom soup
  • 1 small onion, diced
  • 1 green pepper, diced
  • 1 teaspoon black pepper (optional)
  • 4 tablespoons Parmesan cheese

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 10-inch square casserole dish.
  2. In a large mixing bowl, combine grated zucchini, dry rice, cream of mushroom soup, diced onion, diced green pepper, black pepper (if using), and Parmesan cheese.
  3. Mix well until all ingredients are evenly incorporated.
  4. Transfer the mixture into the prepared casserole dish and spread evenly.
  5. Cover with aluminum foil and bake in the preheated oven for 1 hour, or until the rice is tender and the casserole is heated through.
