A flavorful stuffed egg dish with bacon, nuts, and curry, perfect as an appetizer or brunch centerpiece for those who enjoy rich, savory bites with a touch of spice.

Ingredients

  • 12 hard-boiled eggs
  • 3 slices bacon
  • 3 Tbsp. pecans or walnuts
  • 1/4 tsp. curry
  • 3 Tbsp. mayonnaise
  • 1 tsp. mustard
  • dash of paprika

Instructions

  1. Boil eggs for 12 minutes, then set aside to cool.
  2. Cut each egg in half (not lengthwise), and slice a small amount off the bottom of each so they can stand upright on a dish.
  3. Remove the yolks from the eggs and crumble the bacon and nuts finely.
  4. Fill each egg white half with crumbled bacon and nuts, lightly seasoned with salt and pepper.
  5. In a bowl, blend the egg yolks with curry, mayonnaise, and mustard until smooth.
  6. Use a pastry bag to squeeze the yolk mixture into each egg half.
  7. Sprinkle additional bacon and nut mixture over the top of each stuffed egg.
  8. Finish by sprinkling with paprika.
