A hearty casserole combining ham, eggs, and cheese with a crispy bread crumb topping, perfect for breakfast or brunch and easy to prepare ahead of time.

Ingredients

  • 1 cup diced ham
  • 3 to 4 tablespoons butter
  • 12 eggs
  • 4 tablespoons butter
  • 4 tablespoons flour
  • 2 cups milk
  • 1 cup Cheddar or American cheese
  • salt and pepper to taste
  • 2 1/2 cups soft bread crumbs

Instructions

  1. Cook the diced ham in butter until lightly browned.
  2. Add the slightly beaten eggs and scramble with the ham.
  3. Pour the egg and ham mixture into a greased 14 x 18-inch Pyrex pan.
  4. Make a white sauce by cooking flour, butter, and milk together.
  5. Add cheese, salt, and pepper to the white sauce and cook until the cheese is melted.
  6. Pour the white sauce over the eggs and ham in the casserole.
  7. Sprinkle buttered bread crumbs on top and add a dash of paprika.
  8. Bake at 375°F (190°C) for 30 minutes.
