Ingredients

  • 1 lb. ground beef
  • 2 green peppers, sliced
  • 1 (29 oz.) can crushed tomatoes
  • 1 tsp. oregano
  • salt and pepper to taste
  • 1 medium eggplant, diced
  • 1 onion, sliced
  • 2 beef flavored cubes
  • 1 clove garlic
  • 3 Tbsp. chili powder
  • 1 cup water

Instructions

  1. Brown the ground beef in a large skillet over medium heat and drain off excess fat.
  2. Add all ingredients—crushed tomatoes, green peppers, diced eggplant, sliced onion, garlic, beef flavored cubes, oregano, chili powder, water, salt, and pepper—to the skillet.
  3. Cook over low heat, covered, for about 1 1/2 hours, stirring occasionally.
  4. Serve hot, garnished with grated cheese sprinkled on top.
