Eggplant Parmesan in the microwave offers a quick, cheesy, and flavorful vegetarian main dish with crispy breaded eggplant slices topped with rich spaghetti sauce and melted mozzarella.

Ingredients

  • 2 small eggplant (about 1 lb. each)
  • 1/4 cup dried bread crumbs
  • 1/2 teaspoon oregano
  • 2 tablespoons mayonnaise
  • 1 (14 to 16 oz.) jar chunky style spaghetti sauce
  • 1 (8 oz.) package shredded Mozzarella cheese
  • 2 teaspoons grated Parmesan cheese

Instructions

  1. Cut eggplant crosswise into 3/4-inch thick slices.
  2. Combine bread crumbs and oregano on waxed paper.
  3. Brush eggplant slices on one side with mayonnaise.
  4. Coat the mayonnaise-brushed side with the crumb mixture.
  5. Arrange eggplant slices, crumb sides up, in a shallow 2 1/2-quart casserole, overlapping if necessary.
  6. Cover with waxed paper and microwave on High for 12 to 15 minutes, until very tender.
  7. Rearrange eggplant slices and rotate the dish halfway through cooking.
