- Cut eggplant crosswise into 3/4-inch thick slices.
- Combine bread crumbs and oregano on waxed paper.
- Brush eggplant slices on one side with mayonnaise.
- Coat the mayonnaise-brushed side with the crumb mixture.
- Arrange eggplant slices, crumb sides up, in a shallow 2 1/2-quart casserole, overlapping if necessary.
- Cover with waxed paper and microwave on High for 12 to 15 minutes, until very tender.
- Rearrange eggplant slices and rotate the dish halfway through cooking.
