Ingredients

  • 4 slices bacon
  • 2 Tbsp butter
  • 2 Tbsp minced onion
  • 2 Tbsp flour
  • salt
  • pepper
  • 1 cup milk
  • 1 (6 oz) package crabmeat
  • 1 Tbsp sherry
  • 1 1/2 cups shredded Swiss cheese
  • 4 English muffins

Instructions

  1. Fry bacon until crisp, crumble and set aside.
  2. In a medium saucepan, melt butter and sauté minced onion.
  3. Stir in flour, salt, and pepper; cook 2 to 3 minutes, stirring.
  4. Slowly stir in milk and cook for 5 minutes until thickened.
  5. Add crabmeat, sherry, and shredded Swiss cheese; stir to combine.
  6. Split and toast English muffins.
  7. Poach eggs.
  8. Arrange eggs on toasted muffins and cover with crab sauce.
  9. Sprinkle with crumbled bacon and serve.
