Ingredients

  • 2 lb. whole beef tenderloin
  • 1/2 cup softened butter
  • 1/4 cup chopped scallions
  • 2 Tbsp. soy sauce
  • 1 tsp. Dijon mustard
  • 3/4 cup dry sherry or dry white wine
  • dash of pepper

Instructions

  1. Rub the tenderloin with 2 tablespoons of softened butter.
  2. Place the tenderloin on a rack in a shallow pan and bake at 400°F for 20 minutes.
  3. In a small saucepan, cook chopped scallions in the remaining butter until tender.
  4. Add soy sauce, Dijon mustard, and pepper to the scallions.
  5. Stir in dry sherry or white wine and heat just to boiling.
  6. Pour the sauce over the tenderloin and return to the oven.
  7. Bake for an additional 25 to 30 minutes for medium-rare, basting frequently.
  8. Serve hot.
