- Crumble the English muffins and set aside.
- Drain and chop the pears into small pieces and place them in a greased 9-inch or 10-inch pie plate.
- In a processor or blender, blend lemon juice, eggs, and sugar until combined.
- Add milk and blend again, then stir in the English muffin crumbs.
- Pour the mixture over the pears in the pie plate.
- Bake at 350°F (175°C) for 55 minutes to 1 hour until set.
- Remove from oven and let cool on a plate.
- In a pan, melt margarine, then add brown sugar and whipping cream, bringing to a boil for 4 to 5 minutes.
- Remove from heat and stir in vanilla.
- Serve by spreading Cool Whip on top of the cooled pie and pouring the caramel sauce over.
