Ingredients

  • 1 head lettuce
  • 1 cup sour cream
  • 1 tomato
  • 2 green onions
  • 1 cup cheddar cheese
  • 1 fryer (chicken)
  • 1 cup green diced chilies
  • Enchilada sauce
  • Olives
  • Corn tortillas

Instructions

  1. Preheat oven to 450°F.
  2. In a skillet, heat enchilada sauce.
  3. In another skillet, stir a cup of enchilada sauce into shredded chicken until heated through.
  4. Put all chopped vegetables and olives on a large plate for easy access during assembly.
  5. Fill corn tortillas with the chicken mixture and vegetables.
  6. Roll the filled tortillas and place them in a baking dish.
  7. Pour enchilada sauce over the assembled enchiladas.
  8. Sprinkle with cheddar cheese.
  9. Bake in the preheated oven for 20 minutes until bubbly and cheese is melted.
