A comforting pudding combining sweet raisins and dates with a moist, cake-like texture, perfect for family desserts or cozy get-togethers, served warm or cold.

Ingredients

  • 1 c. sugar
  • 1 c. flour
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1/2 c. raisins
  • 1/2 c. chopped dates
  • 1/2 c. milk
  • 1 tsp. vanilla
  • a little cinnamon
  • 1/2 c. brown sugar
  • 2 c. hot water
  • 2 tsp. butter

Instructions

  1. Mix together the dry ingredients: sugar, flour, baking powder, salt, cinnamon (if desired), brown sugar, and the raisins and chopped dates.
  2. Add milk and vanilla to the dry mixture and stir until well combined.
  3. Pour the mixture into a casserole dish.
  4. In a separate bowl, combine hot water and butter, then pour over the first mixture in the casserole.
  5. Bake at 350°F (175°C) for 45 minutes until golden and set.
  6. Serve plain or with whipped topping, warm or cold.
